Fresh portobello mushroom caps are slow roasted till absolute tenderness. These “burgers” are topped with a slow roasted green chili pepper, and white cheddar cheese, which is then melted on top of the “burger”. These super tasty morsels are placed over a bed of quinoa, red cabbage, corn, and radishes with our homemade balsamic vinaigrette on the side.
